These fancy flapjacks are perfect for brunch or an easy dinner.
Cooking time: 15 minutes (30 minutes if you're making the flapjacks)

- 100g baby spinach leaves
- 8 ready-made flapjacks (or use this flapjack recipe)
- 4 slices cooked ham
- 100g grated Cheddar
- ½ tbsp olive oil
- 1 tbsp chopped onion
- 100ml cream
- 1 tsp wholegrain mustard
- 1 tsp Dijon mustard
- Heat the oven to 200°C. Put the spinach into a pan with a splash of water. Put a lid on and cook over a low heat until the spinach has wilted. Drain.
- Put the flapjacks on a baking tray, divide the spinach between 4 of them and top each with a slice of ham and grated Cheddar. Warm in the oven for 5 minutes, or until the cheese has melted. Heat the oil in a pan and cook the onion for 1 min. Add the cream and mustards, season and gently warm.
- Lay a plain flapjack on top of each cheese flapjack and serve with the sauce.
Notes: These flapjacks stacks are great if you're making brunch for larger numbers. Just get them all prepped, then pop in the oven when you’re ready to eat.
