Make this a refreshing summer salad by substituting the figs with fresh watermelon slices.
Cooking time: Ready in 10 minutes
- 4 PnP Figs, halved
- 100g PnP Feta, crumbled
- 100g pomegranate seeds
- 100g PnP Rocket
- 1 PnP Garlic Clove, chopped
- 2 tsp honey
- 1 tsp PnP Salt
- 60ml pomegranate juice
- 1 tbsp PnP Balsamic Vinegar
- 125ml PnP Extra Virgin Olive Oil
- Arrange the salad ingredients on a large platter.
- Whisk the dressing ingredients together, then toss the dressing through the salad just before serving.
