1.5kg chicken pieces
2 tbsp olive or avo oil
3 preserved lemons, washed, then quartered
zest of 2 lemons
large bunch mint, chopped
3 garlic cloves, crushed
- Heat the oven to 200°C. Put the chicken in an ovenproof dish and drizzle with the oil. Season and scatter over the preserved lemons. Roast for 30–35 min, or until the skin is crisp and the lemons are charred.
- Meanwhile, in a small bowl, mix together the lemon zest, chopped mint and garlic. Sprinkle the herb mixture over the cooked chicken and serve.
