Now, it may not be very often that we have any leftover hot cross buns, but now and again it somehow happens (probably because someone put them somewhere they’re not supposed to be and they got forgotten!).
Don’t throw away those stale, leftover hot cross buns, take a minute or two and turn them into these delicious treats! In fact, these recipes are so delicious, you may find yourself buying too many hot cross buns on purpose, just to turn them into everything from hot cross bun bread and butter pudding to hot cross bun baked Alaskas. Yum!
1 Hot cross bun bread and butter pudding
Hot cross bun bread and butter pudding is probably the most obvious thing to do with leftover hot cross buns — but that doesn’t mean it’s not completely moreish.
2 Almost healthy yoghurt parfaits
The kids will love you forever if you let them eat leftover hot cross buns for breakfast! Put them in these yoghurt parfaits and it’s actually a relatively balanced meal.
Take a couple of hot cross buns, halve and spread with apricot jam. Cut in half again and arrange in 4 tumblers with a few chopped tinned apricots. Top with Greek yoghurt, then sprinkle with brown sugar. Allow the sugar to melt into a caramel and serve.
3 French toast with leftover hot cross buns
Need a speedy dessert or just something treatful to satisfy a craving in an instant? Look no further than French toast, with an Easter twist!
Cut hot cross buns into soldiers or slices, then dunk in beaten egg. Fry for a couple of minutes on each side in melted butter until golden and crispy. Sprinkle with sugar and, if you’ve really got a sweet tooth, serve with caramel sauce to dip into.
4 Chocolate toasties
What’s better than hot cross buns? Hot cross buns with chocolate, of course. These chocolate toasties are seriously indulgent.
Slice hot cross buns and butter one side of each half. Spread each unbuttered side with chocolate spread and sandwich together with the butter on the outside. Heat a frying pan and cook the toasties for 3 to 4 min each side until gooey and melted.
5 Mini hot cross bun baked Alaskas
Mini baked Alaskas made of leftover hot cross buns are real showstoppers, but they’re also a breeze to make. Win-win!
Heat the oven to 200°C. Stamp out 2 circles from a hot cross bun and put on a baking tray. Add a scoop of vanilla ice cream to each and freeze. Meanwhile, whisk 1 egg white until stiff, then whisk in 50g castor sugar. Dollop the meringue on top of the ice cream until it’s completely covered. Bake for 5 to 10 min.
6 Hot cross bun ice-cream bombes
