400g minced chicken
1 small red onion, peeled and finely chopped
6 tbsp fresh breadcrumbs
1 lemongrass stalk, finely chopped
1 bunch coriander, finely chopped
1 tsp Thai fish sauce
100g sweetcorn kernels
Juice of 1 lime
6 large portobello mushrooms
2 tsp soya sauce
6 burger buns
6 slices tomato
1. Mix all the burger ingredients together (you may find it easier to do this with your hands). Divide the mixture and shape into 6 burgers.
2. Heat the oven to 180°C. Put the mushrooms on a baking tray and drizzle over the soya sauce, then cook for 25 min. Meanwhile, griddle the burgers on each side until browned, then put them on an oiled baking tray and cook in the oven for the last 15 min of the mushrooms’ cooking time.
3. To serve, split the buns and griddle the cut sides. Add a slice of tomato and a mushroom to each, then top with a burger, mustard and lettuce leaves.
