1 ripe avocado
Juice of 1 lime
2 tbsp basil leaves
1 garlic clove, peeled
2 tbsp virgin olive oil
2 tbsp Parmesan, plus a few shavings for serving
250g tagliatelle verdi (or plain-coloured tagliatelle)
1. Scoop the avocado flesh into a food processor. Add all the ingredients except the tagliatelle. Add salt and freshly ground black pepper, then blend until just smooth.
2. Cook the tagliatelle as per the pack instructions, drain well, and stir through the freshly made avocado mixture. Serve the dish immediately with a few shavings of Parmesan scattered on top.
