What if we told you that it's possible to make this cheat's cheesecake in the microwave in 10 minutes? Once you've mastered the basic 3 ingredient cheesecake recipe, try it with different add ins. Some of our favourites are 2 tablespoons of cocoa powder, a tablespoon of lemon juice + a teaspoon of zest or fresh cherries.
Serves: 6 to 8
Cooking time: 10 minutes + chilling time
- 1 litre plain double cream yoghurt
- 1 tin condensed milk
- 200g biscuits, crushed
- Press the biscuits into an even layer at the bottom of a deep microwave-safe dish.
- Mix the condensed milk with the yoghurt and carefully pour the mixture over the biscuit base. Smooth the top, then microwave on high for 5 to 6 minutes, or until set.
- Refrigerate until cool, then slice to serve. If you like, you can serve your 3-ingredient cheesecake with more biscuit crumbs on top, or your favourite fresh fruit.
Notes: If you want to serve the cheesecake out of the dish that you cook it in, once it's been in the fridge for at least 4 hours, run a hot knife around the edge and remove it.
