4 English muffins, halved
150ml passata sauce
16 slices chorizo
160g sundried tomatoes
2 roasted peppers, sliced
a few pitted black olives, sliced
150g grated mozzarella small handful fresh basil
- Toast the muffin halves on a baking tray under the grill for 2 minutes on each side.
- Top each muffin half with some passata, chorizo, sundried tomatoes, peppers, olives and mozzarella. Put under the grill for 2–3 minutes until golden and bubbling, and serve topped with some fresh basil.
This quick dish also works well to make cheat's pizzas out of pita bread, tortillas, fresh bread rolls or baguettes.
