1 cooked chicken breast (or equivalent amount of leftover roast chicken), chilled and shredded
1 mango, skin removed, stoned and diced
A few very thin slices of red onion
½ a cucumber, cut into small cubes
10 fresh mint leaves, finely sliced
Handful fresh coriander leaves or flat-leaf parsley, chopped
1 little gem lettuce, shredded
Freshly ground black pepper
Juice of 1 lime
1 tbsp olive or avocado oil
- Combine all the salad ingredients in a bowl and mix together well.
- Mix the dressing ingredients in another bowl and add to the salad, coating well before serving.
