Ingredients
Small head of butter lettuce
500g roasted beetroot chunks
About 20 cooked prawns
2 handfuls fresh broad beans, blanched
2 rounds feta cheese
4 tbsp mayonnaise
1 tbsp lemon juice
Salt and pepper, to taste
Instructions
- Tear the butter lettuce into a bowl, then top with the beetroot, prawns, broad beans and feta.
- Mix the mayo, lemon juice and seasoning, then drizzle over the salad. Toss and then serve.
