2 tbsp olive oil
8 sausages, cut into chunks
2 onions, thinly sliced
2 tsp garam masala
2 x 400g tin butter beans, drained and lightly mashed
400g tinned chopped tomatoes
Large handful coriander, roughly chopped
- Heat 1 tbsp oil in a frying pan and add the sausages, onions and garam masala. Fry for 10 min until the onions are soft.
- Add the beans, tomatoes and coriander, season, and stir well. Cook for 5 min, turning when a golden crust starts to form on the bottom of the pan. Fry the eggs in remaining oil and serve on top of the hash.
