1 tsp cumin seeds, crushed
1 tsp coriander seeds, crushed,
1 small carrot, spiralised or grated
1 small courgette, spiralised or grated
fresh coriander and 40g mixed salad leaves, to serve
- Toss the cumin and coriander the carrot and courgette sprials. Add to a small non-stick frying pan and cook gently over a medium heat, stirring occasionally, until almost tender.
- Make a space in the centre of the vegetables, add a squirt of spray oil and crack in the egg. Increase the heat and fry until the egg white has set. Serve sprinkled with fresh coriander and the salad leaves.
