2 to 3 pieces Sasko Low-GI Seeded Brown Bread
250g cooked skinless, boneless chicken breasts
80g (2 stalks) celery
½ an apple, thinly sliced
4tbsp low-fat or fat-free plain yoghurt
2tbsp wholegrain mustard
pinch salt and pepper
fresh herbs, to serve
- Cut the chicken and celery into small cubes and place into a large bowl with the apple.
- Pour in the yoghurt and mustard and stir to combine, seasoning with a pinch of salt and pepper.
- Toast the bread and place a slice on each plate.
- Divide the chicken salad between the toast and garnish with fresh herbs.
