3 mini bagels, cut into quarters and split in half
2 tbsp mayonnaise
1 tsp Dijon mustard
2 tsp chopped chives
3–4 gherkins, sliced
6 thin slices smoked beef, cut in half
- Put the bagel pieces on a baking tray and lightly toast under the grill. Mix together the mayonnaise, mustard and chives with a little seasoning.
- Put the bagel bottoms onto a serving plate and spread with a little of the mayonnaise, then add a slice of gherkin and a piece of beef, rolled up. Put the top on and secure with a cocktail stick or canapé pick.
Top tip: For a more carb-friendly option, consider using whole-wheat wraps rather than bagels. Simply lay the filling on the wraps, roll up tight, cut into slices and skewer.
