If you’re after a quick but tasty seafood soup recipe, give this one a try. All you need is 20 minutes!
- 1 tbsp olive oil
- 1 onion, peeled and chopped
- 1 leek, sliced
- 1ℓ milk
- 2 large potatoes, cubed
- 2 tbsp flour
- 250g skinless smoked haddock
- ¼ tsp thyme leaves
- Heat the oil in a large pan. Add the onion and leek and cook gently for 5 min, until softened. Pour in the milk, add the potato and bring to the boil. Reduce the heat and simmer for 5 min, then stir in the flour.
- Add the smoked haddock. Simmer for 7 min, or until the fish is just tender. Taste and season. To serve, sprinkle the chowder with thyme.
