500g frying steak, fat removed
2 tsp paprika
2 tsp cayenne pepper
2 tsp olive oil
4 flour tortilla wraps
3 tomatoes, chopped
Small bunch of coriander, chopped
Handful of Cheddar cheese, grated
150ml sour cream, to serve
For the salsa:
3 ripe tomatoes Small garlic clove, crushed
Small bunch coriander, chopped
½ red onion,
Juice of 1 lime
1 tbsp olive oil
- Thinly slice the steak and toss in the paprika, cayenne pepper and olive oil. Fry in a heavy pan over a high heat for 3 min, until just cooked and sizzling.
- Warm the tortillas in a grill pan for a minute or two on each side. Divide the cooked steak and chopped tomatoes between the warmed tortillas. Add fresh coriander, cheese and sour cream to each one.
- To make the salsa, chop the tomatoes and mix in a bowl with the other ingredients. Serve with the fajitas.
