50g butter, softened
1 garlic clove, crushed
3 tbsp freshly chopped parsley, basil and mint
2 chicken breasts
1 egg, beaten
60g fresh breadcrumbs
2 tbsp olive or avo oil
- Make ahead: mix the butter, garlic and herbs, wrap in cling wrap and chill. Put the chicken between sheets of cling wrap and bash flat until doubled in size. Divide the garlic butter between them, wrap the chicken around and secure with toothpicks.
- Dip the chicken into the egg, then the breadcrumbs; repeat and chill until ready to cook, ideally 2 hr ahead.
- When ready to cook, heat the oven to 200°C. Fry the chicken in the oil on both sides until golden. Transfer to a baking tray and cook for 15 min, or until cooked through.
