¾cup sundried tomatoes in olive oil (or you can rehydrate them yourself using a mixture of olive oil, balsamic vinegar and a little soy sauce)
⅓cup pine nuts (these can be a little pricey so you can substitute them with cashews or pecans)
2 garlic cloves, chopped
½cup olive oil
⅓cup finely grated Parmesan cheese
- Blend the tomatoes, pine nuts and garlic together, scraping down the sides of the blender occasionally, until almost smooth.
- With the motor running, add the oil in a slow, steady stream. Process to combine.
- Transfer to a bowl. Add the Parmesan. Season with salt and pepper. Stir to combine
